Serves 4 people.

  • 3 lbs pork butt or shoulder
  • 24 oz Salsazar Salsa Verde
  • 3 Tbps kosher salt
  • 3 cups white wine (any variety)
  • 3 cups chicken stock or water

How to prepare:

  • Remove fat from pork.
  • Cut the pork into chunks and season with salt.
  • Heat a sauté pan, grill or flat top until smoky hot.
  • Braise pork on all sides until you get a nice crispy crust.
  • Place pork in a roasting pan or baking dish.
  • Add Salsazar Salsa Verde, white wine, and chicken stock or water.
  • Preheat oven to 400 Fahrenheit (convention bake if available).
  • Place in oven for at least 2 hours, or until the meat is fork-tender.
  • Remove the pork from the oven, shred it using two forks, and discard any large chunks of fat. Taste and adjust salt if needed.

Note: The exact cooking time may vary depending on the size and thickness of the pork chunks, so it’s best to monitor the pork’s doneness and adjust the cooking time accordingly. Using a meat thermometer is the most reliable way to ensure the pork is cooked to the desired internal temperature (165 degrees), ensuring it’s tender and easy to pull a part.
